Grilled Quesadillas with black beans & sweet corn with zucchini.
Pineapple Carrot cake with walnuts. I used Ina Garten’s recipe (find here: http://www.foodnetwork.com/recipes/ina-garten/carrot-and-pineapple-cake-recipe/index.html ) but subsituted Earth Balance & low fat cream cheese for the frosting. It was incredible.
Breakfast this morning! My friend & I went to this cute little cafe…I got granola & berries. It was delicious :)
Parmesean Butter Noodles
-1 box spaghetti noodles
-2TBSP butter or Earth Balance (soy butter)
-1/4C extra virgin olive oil
-Handful of fresh basil
-Garlic pepper to taste
-Salt to taste
-3/4C parmesean cheese
Boil the noodles, drain when al dente. Pour back into the hot pan. Mix in butter, olive oil, salt, & garlic pepper. Stir around. Add parmesean & basil. Enjoy :)
Mickey’s Green Juice
-1 large cucumber
-1 head romaine lettuce
Greek yogurt & Granola
-1C plain unsweetened greek yogurt
-1/2C any berry
These dark chocolate cookies with caramel & sea salt were made from the Krusteaz pre packaged cookie mix. They were easy and tasty! Instead of drizzling the caramel on, I spread it on.
Homemade Baked Apples
-Granny Smith apples (4 would be good)
-1C Brown sugar
-1/4C shredded coconut
-1 stick unsalted butter
-Cinnamon to taste
Decore the apples. Place small hunks of butter at the bottom of the apples and around them in an oven-safe dish (like Pampered Chef). Stuff the apples with brown sugar and oatmeal. Sprinkle brown sugar, cinnamon, and oatmeal around the apples to make extra filling. Bake at 350*F for 20minutes. After, take apples out, stuff with more sugar, sprinkle with shredded coconut and bake for another 10 minutes.
